Don’t knock it until you try it! I questioned the yum factor of this dish until I went for it and WOW! The softness of the egg, crunch of the toast & flavor of the asparagus are a fabulous combination.
Bring some water to boil on the stove. Carefully lower egg into the boiling water. Reduce heat & gently simmer for 6 minutes. Cool under running water & peel. For fresh asparagus, drizzle with olive oil & salt and place under broiler for 4-10 mintes (tossing once). You can toast the bread in the broiler too if you like. Serve with the tomatoes to complete the colorful masterpiece that is your plate. Savor & enjoy!
